When my doctor told me I was sensitive to wheat and cow's milk he had my full attention. I was suffering from BIG headaches, thus had been in several emergency wards. Before this, sugar was eliminated from my diet, but the headaches continued. I tried to take wheat out of my diet and was successful, but oh my I missed an occasional sandwich not to mention my morning toast!
A magazine article told of non-gluten bread and other baked products. That is all I needed, and into the local health food shop I went. At this time our bed and breakfast - the Hannah Marie Country Inn - was sponsoring the Herb Division competitions at the Clay County Fair. Although that was enjoyed, for the past three years we have had the pleasure to sponsor the Non-gluten Competition, Baked Goods Division. Interested folks came from all around to watch the judging of non-gluten: yeast bread, cookies and crackers; they asked if we would share the recipes. Gradually the winners will appear on this site. Next year the competition will center on non-gluten muffins.
As we have started serving non-gluten breakfasts at our inn we have received appreciation from those guests who are wheat sensitive. Adding this food Choice has become a blessing!
